On my recent trip home to Wisconsin, I had the good fortune of tasting two (!) different carrot soups. The first bowl was a delightful chilled carrot ginger soup at Meritage in Milwaukee, near picturesque Wauwautosa. The second, at Jolly Bob’s on Madison’s Eastside, managed to satisfy me even more than the entree.
Desirous of cooking but feeling a tad under the weather, a couple nights ago I put this About.com recipe to the test. Sure enough, all the right flavors were there and perfect for my autumnal palate. (Quick note: To preserve the carrot flavor, I used about a half less coconut milk than the recipe lists.)
Now you can warm up to fall one spoonful at a time.
