Like frites, sans grease.

Don’t you love it when going to the grocery store and buying a dish’s ingredients is the hardest part of making it? Example: Panisses! They’re chewier than fries because they’re made of chickpea flour, but offer that same crisp, salty fix to the palate. This version, which came from Mark Bittman, included a salt-paprika-lemon zest seasoning.
